This is a nice cooking game with Tessa! Will you join her? Today Tessa's going to prepare falafel with a yoghurt-cucumber sauce. Falafel is an originally Lebanese vegetarian dish with chickpeas or broad beans. In this cooking game you learn exactly how to prepare this dish. You need the following ingredients: - 175 skimmed yoghurt - half a cucumber, peeled and chopped - 1 tbs chopped fresh chives - salt - pepper - 1 tbs mayonnaise - 400 g drained chickpeas - 1 chopped onion - half a bunch of parsley - 2 cloves of garlic, chopped - 1 egg - 2 tsp ground cumin - 1 tsp ground cilantro - pinch of cayenne pepper - 1 tsp lemon juice - 1 tsp baking soda - 1 tbs olive oil - 100 g dry breadcrumbs - frying oil. You use these ingredients in the following way: Mix the yoghurt, cucumber, chives, salt, pepper and mayonnaise in a bowl. Put the mixture in the fridge for at least 30 minutes. Mash the chickpeas in a bowl until you get a thick pulp. Puree the onion, parsley and garlic in a blender. Stir it through the chickpeas. Add the egg, cumin, cilantro, salt, pepper, cayenne pepper, lemon juice, baking soda and olive oil to the chickpeas mixture and mix it. Add the breadcrumbs little by little, until the mixture isn't sticky any longer. Roll 8 balls and flatten them. Heat the oil in a big frying pan on a temperate fire. Fry the falafel in the hot oil until it's brown everywhere. Serve the falafel with the yoghurt-cucumber sauce. Enjoy!
